Will a coating stop hard water spots?

It stops them etching, which is the part that matters. You will still see spots after the sprinklers hit the car. The difference is that on a coated panel they wipe off, and on bare clear coat left in the sun they can etch in permanently.

How long does a five year coating really last here?

Five years is the product rating under good maintenance, not a guarantee against a car parked under a sap heavy tree and washed in a tunnel. Maintained properly it holds for years. Neglected, expect noticeably less, and I would rather set that expectation now.
